Neither Sivan Cohen nor
her fiancé, Eli Kase, are fans of cake, so when it came time to address this
key component for their nuptials at Seven Degrees in Laguna Beach, Cohen opted
for a rice krispy confection. But the catch was they needed the three-tiered
treat tobe kosher (meaning no dairy!). Enter the talented Catering by Brenda, whose team tackled the nontraditional cake without a second thought.

“We love a challenge in
our business, so when Sivan asked for this fun twist on a traditional idea, it
was a piece of cake,” says owner Brenda Walt. She incorporated kosher marshmallow
cream (created using non-animal-based gelatins) and whipped up a snappy—and tasty—substitute.
