Simple. Modern. Tasteful; the first three words that come to mind while flipping through the photos by Michelle Chiu from this inspiration shoot turned surprise engagement at FLDWRK Fullerton. Originally set to showcase the food and styling talents of Colette's Catering & Events, the shoot quickly became a covert operation when Nick McClellan, the significant other of Kierstyn Rios, one of the models, approached the team with his plan to pop the question. The stunning tablescape of creams, blues and greens, with florals from Rekindle Creative Co. and stationery by Happily Ever Etched was set on rustic pieces by Found Vintage Rentals, all serving as the backdrop for a day Nick & Kierstyn will never forget.
After he asked and she said "yes", the couple celebrated by endulging in a deliciously creative menu cooked up by Colette's Catering, who've been kind enough to share that tantalizing line-up, plus a favorite recipe with us below. RECIPE
INGREDIENTS
1 Meyer lemon, zest and juice
½ c. Mayonnaise
Salt
Pepper
1 live lobster, poached with citrus, chilled, then meat pulled from shell and chopped
Celery salt, pepper to taste
1 Celery stalk, brunoised
8 Miniature lobster rolls
Edible micro flowers, for garnish
PROCEDURE
To make meyer lemon aioli: Whisk mayonnaise to aerate. With a microplane, zest 1 meyer lemon, add to mayo along with the juice of half of the meyer lemon. Taste for flavor, and balance with salt.
Gently fold prepared lobster meat with meyer aioli, and celery, season with celery salt to taste.
Butter and toast the miniature lobster roll, fill with lobster mixture, and garnish nicely with micro edible flowers.
